Veggie Surf & Turf

On November 11, 2013, Just Food held the finals event for the 2013 Great CSA Smackdown at Brooklyn Winery. Team Emo Eggplant (aka Dan Tainow and Caroline Maggi) represented Grand Street CSA in the competition and reimagined surf and turf using kohlrabi "oysters" and beet burgers, served with a side of sauteed kale and Brussels sprout leaves.

Ingredients:

  • Kohlrabi
  • Olive Oil
  • Lemon juice
  • Alder smoked sea salt
  • Beets
  • Smoked paprika
  • Egg
  • Garlic
  • Potatoes
  • Salt & Pepper

Procedure:

  1. Prepare the kohlrabi oyster: Thinly slice kohlrabi and top with a drizzle of olive oil, lemon juice, and a grain of alder smoked sea salt.
  2. Prepare the beet burger: Saute garlic in olive oil. Peel and shred beets and mix with smoked paprika, egg, and sauteed garlic. Form small beet burgers and pan sear in olive oil. Slice the top off a potato and a cross section of the potato. Fry both in olive oil until crisp.
  3. Serve the beet burger on the potato chip bun.

Toppings

  1. Fruit & Root Slaw: Grate pear, apple, carrot, and celery root and marinate in vinegar and salt and pepper to taste. Drain and use as a burger topping.
  2. Butter Sage Mushrooms: Slice mushrooms and sage. Cook the mushrooms and sage in butter until soft and use as burger topping.

Side of Sauteed Kale & Brussels Sprout Leaves

  • Kale, washed and chopped
  • Brussels Sprouts, trimmed and separated into leaves
  • Garlic
  • Olive Oil
  • Lemon juice
  • Salt & Pepper
  1. Saute garlic in olive oil. When the garlic is soft, but not burnt, add greens and drizzle with lemon juice. Season with salt to taste. Stir the greens while they cook over medium heat until they are wilted and dark green.

The Great CSA Smackdown is a city-wide cooking competition for Just Food Network CSAs. The 2013 finals competitors included Crown Heights Farm Share, Washington Square CSA, Grand Street CSA, and Sixth Street CSA. The judges were Tamar Adler (chef and cookbook author), Jimmy Carbone (Jimmy's No. 43, Food Karma), and David Colston (Executive Chef, Brooklyn Winery).
